My Aunt Linda's Hashbrown Breakfast Casserole

🌜Make the night before
🌞Bake in the morning

1 pound sausage
1/4c chopped green onion
2 1/2c frozen hash browns or cubed
5 large eggs (lightly beaten)
2c shredded sharp cheddar cheese
1 3/4c milk
1c all purpose baking mix
1/4 tsp salt
1/4 tsp pepper

Cook:  sausage & onion in large skillet over med high heat or until sausage crumbles
Stir in hash browns, cook 5-7 minutes or until sausage is no longer pink and potatoes are lightly brown
Drain mixture
Spoon into a greased 13x9 baking dish
In separate bowl stir eggs, cheese and next 4 ingredients.
Pour evenly over sausage mixture, stir well.
Cover, chill 8 hours.
Bake covered with no stick foil - 350° for 45 minutes.  Uncover and bake another 15 minutes or until wooden toothpick inserted comes out clean.
Remove from oven and let stand 5 minutes
Serve with toppings.

Topping suggestions:  hot sauce, picante sauce, sour cream

*To keep casserole warm, cover with foil on 200°
