Healthier Chicken Nuggets


  • Slice chicken breasts lengthwise making them thinner
  • Now slice into strips or nuggets
  • In one bowl place planko crumbs and Italian seasoning blend of your choice. (Do not be liberal with seasoning, I usually add 1/4c seasoning blend)
  • Mix in a separate - 2 egg whites and 1 egg, salt & pepper
  • Dip chicken strips/nuggets into egg then into planko seasoning mix.
  • Place strips on greased 9 x 13 baking sheet
  • Bake on 400 for 20-30 minutes (flipping once)

VARIATION:

Make whole grain noodles or zoodles (zucchini noodles)
Serve chicken strips/nuggets over noodles and add  21 Day Fix Approved Grandma's Tomato Sauce (THE BEST) or if in a crunch for time, RAOS Homemade marinara sauces are all clean ingredients.
Top with mozzarella for a quick Chicken Parmesan Dish.
