1 tsp. baking soda
1/4 tsp. sea salt (or himlayan salt)
1/4 cup coconut oil (melted)
1/4 cup pure maple syrup (or raw honey)
1 large egg
2 large egg whites
1 tsp. pure vanilla extract
1/2 cup dark chocolate chips
- Preheat oven to 375
- Line baking sheets with parchment paper or spray lightly with olive oil spray
- Combine almond flour, baking soda and salt in medium bowl; mix well. Set aside
- Beat oil and maple syrup with mixer until creamy (approx 4-5 minutes)
- Add egg, egg whites, extract; beat for an additional 2 minutes
- Add almond flour mixture to egg mixture; mix until blended.
- Add chocolate chips
- Drop by rounded tbsp onto to cookie sheet
- Flatten cookies with spatula
- Bake 14-16 minutes
- Store in airtight container
