3 cups almond flour
1 tsp. baking soda
1/4 tsp. sea salt (or himlayan salt)
1/4 cup coconut oil (melted)
1/4 cup pure maple syrup (or raw honey)

1 large egg
2 large egg whites
1 tsp. pure vanilla extract
1/2 cup dark chocolate chips


  1. Preheat oven to 375
  2. Line baking sheets with parchment paper or spray lightly with olive oil spray
  3. Combine almond flour, baking soda and salt in medium bowl; mix well. Set aside
  4. Beat oil and maple syrup with mixer until creamy (approx 4-5 minutes)
  5. Add egg, egg whites, extract; beat for an additional 2 minutes
  6. Add almond flour mixture to egg mixture; mix until blended.
  7. Add chocolate chips
  8. Drop by rounded tbsp onto to cookie sheet
  9. Flatten cookies with spatula
  10. Bake 14-16 minutes
  11. Store in airtight container
I can never eat just ONE!
