HEALTHIER Breakfast Egg Casserole

Ingredients:
1 pound turkey sausage
1/2 c chopped green onion
1 pkg frozen riced cauliflower
5 large eggs
2 c shredded sharp cheddar cheese
1 3/4 c skim milk
1 c brown rice flour
1/4 tsp salt
1/4 tsp pepper



Directions:  
Cook sausage and onion in a large skillete over med high heat.   When meat starts to crumble add frozen cauliflower rice and cook another 5-7 minutes or until meat is no longer pink.  
Drain mixture and spoon into greased 13x9 pan.
Stir eggs, cheese and next 4 ingredients in bowl.
Pour evenly over sausage mixture.  Stir well.
Cover. Chill for 8 hours
Next morning:  bake covered at 350 for 45 minute to 1 hour.  Uncover and bake another 10-15 minutes or until knife inserted comes out clean.
Remove from oven.  Let stand for 5 minutes
Serve with sour cream and/or hot sauce.

1 c all purpose baking mix
1/4 tsp salt
1/4 tsp pepper

Directions:  
Cook sausage and onion in a large skillete over med high heat.   When meat starts to crumble add frozen hashbrown and cook another 5-7 minutes or until meat is no longer pink.  
Drain mixture and spoon into greased 13x9 pan.
