Apple Gouda Stuffed Chicken with Sweet Potatoes
Ingredients
- 2 large boneless, skinless chicken breasts
- 4 slices smoked gouda cheese (I used pepper jack)
- 1 apple, sliced
- 1 teaspoon fresh thyme, more as desired for garnish
- 2 sweet potatoes, peeled and diced
- 1/2 tsp smoked paprika
- 1 tsp fresh thyme leaves
- Salt and pepper, to taste
- Olive oil
Instructions
- Preheat the oven to 425° F.
- Spray a large baking dish or sheet pan with nonstick cooking spray.
- In a bowl, mix diced sweet potatoes with olive oil, smoked paprika, 1 teaspoon thyme leaves and salt.
- Place sweet potatoes in a single layer in the prepared baking dish.
- Using a sharp knife, cut a large slit into each chicken breast (a.k.a. butterfly the chicken).
- Inside each chicken chicken breast, layer 4-5 apple slices followed by 2 slices of smoked gouda. Sprinkle the inside with fresh thyme, salt and pepper
- On the top of the chicken, drizzle with olive oil, and a little more salt and pepper.
- Place the chicken in the baking dish and arrange sweet potatoes around chicken.
- Bake for 35 minutes.
- Serve immediately and enjoy!
