Easy Chicken Bowl

  • 12oz rotisserie or leftover chicken, shredded
  • 1½ cups salsa or pico de gallo (Mateo's salsa from Costco has clean ingredients and only 1g sugar)
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • Pinch pepper
  • 4 cups cooked brown rice
  • Yield4 servings
  • Serving Size1/4th recipe

  • Cook Time5 min
Add chicken and salsa to a skillet. Stir well to combine. Add garlic powder, salt and pepper.
Add pre-cooked rice and toss to coat. Divide among four bowls, and serve.

VARIATIONS:
Serve over a bed of lettuce
Instead of rice, add black beans or corn.   
Add rice, black beans & corn.  Cut the serving size of rice to 1/3 and add 1/3c black beans and 1/3c corn.
Instead of rice use quinoa
